apple muffins and johnny appleseed

It’s apple picking season here in Minnesota.  We have many great memories of expeditions to the apple orchard — golden and orange leaves spangled against the brilliant blue sky; warm sun and autumn-crisp air; hiking on wooded paths that crunch ; bright red apples polka-dotting the rows and rows of trees.  Friends and apples and sunshine and happiness! Here’s an apple muffin recipe we enjoy, and a selection of Johnny Appleseed stories you could find at your library.


Apple Nut Muffins

2 eggs
1-1/2 cups milk
1 cup oil
2 big apples, cored and chopped (I leave the peel on for extra fiber)
2 cups white flour
2 cups whole-wheat flour
2/3 cup brown sugar
1 Tbsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 cup chopped walnuts

For the topping, mix together: Margaret Hodges

1/2 cup brown sugar
1 tsp. cinnamon

In large mixing bowl, beat eggs.  Stir in milk, oil and chopped apples.  In separate bowl, combine all dry ingredients.  Stir dry ingredients into egg mixture.  Stir in chopped nuts.  Divide among 24 muffin cups.  Sprinkle with topping.  Bake in 400 degree oven for 20 minutes.
